Cabbage Pancakes are a great way to use up whatever you have in your fridge. It’s super easy to make and comes together in just a few minutes, making it the ideal meal for any time of the day.
Cabbage Pancakes (2-3 servings)
Ingredients:
- 4 cups (240g) green cabbage
- 2 green onions
- 1 Yukon Gold potato
- 2 strips uncooked bacon (or beef, chicken, shrimp, etc.)
- 4 large eggs
- Generous pinch of kosher salt
- Black pepper, to taste
- 2 tbsp neutral-tasting oil, divided
- 1 cup shredded cheese
- Ketchup or Sriracha, to drizzle
Instructions:
MAKE PANCAKE BATTER
1. Thinly slice the cabbage and green onions. Slice the potato into thin matchsticks.
2. Cut the bacon into thin strips.
3. Make the pancake batter: Into a large mixing bowl, whisk together the eggs, generous pinch of salt and black pepper to taste. Add the cabbage, potato, green onions, and bacon. Give it a quick stir.
MAKE CABBAGE PANCAKES
1. In a pan, heat the oil (1 tbsp) over medium heat. Once it’s heated, add half of the batter and cook for 2 to 3 minutes or until the bottom is golden brown. Flip and cook the other side. When both sides are done, remove from the pan and set aside.
2. Repeat with the remaining batter. Once you’ve got good color on both sides, sprinkle on a generous amount of shredded cheese. Cover with the first pancake. Put a lid on and wait until the cheese is melted.
3. Transfer to a serving plate and cut into 4 pieces. Serve with ketchup or sriracha. Enjoy~!
