Bulgogi (Korean BBQ Beef) is one of the most beloved Korean dishes. But today, let’s make it a little bit different. I mean, let’s make it fancier with delicious eggplants.
BULGOGI WITH EGGPLANTS (2 servings)
Ingredients:
- 2 eggplants
- Kosher salt and black pepper, to season
- Cooking spray
- 1 tbsp soy sauce
- 1/2 tbsp sugar
- 1 tbsp mirin
- 1 tbsp oyster sauce
- 1/2 tbsp minced garlic
- 1/2 tbsp toasted sesame oil
- Black pepper, to taste
- 7 oz (200g) ground beef (or ground chicken)
- 1-2 sliced green onions
- Generous pinch of toasted sesame seeds (or salad greens), to garnish
Instructions:
PREP EGGPLANTS
1. Cut the eggplants in half lengthwise. Using a spoon, make a little room for our bulgogi.
2. Season with salt and pepper to taste. Put them in the air fryer.
3. Spray lightly with cooking spray. Cook at 180℃ (355℉) for 5 minutes.
MAKE BULGOGI
1. In a large mixing bowl, stir together the soy sauce, sugar, mirin, oyster sauce, garlic, sesame oil, and black pepper to taste.
2. Add the ground beef and sliced green onions. Mix together. Put the beef mixture on top of the cooked eggplants.
COOK BULGOGI AND EGGPLANTS
1. Cook at 180℃ (355℉) for 10 minutes or until they’re cooked through.
2. Transfer to a serving plate. Garnish with sesame seeds or any greens you like. Serve with hot rice. Enjoy~!

- 1 Tbsp = 15 ml, 1 Cup = 240 ml
