Are you looking for a special dessert for this Christmas? If so, you came to the right place at the right time. Today, let me show you how to make mochi, Japanese rice cakes filled with various ingredients. Alright, are you guys ready? Let’s get started!
FRUIT MOCHI (makes: 4-5)
Ingredients:
- Small-sized fruits (strawberry, tangerine, kiwi, banana, etc.)
- 7 oz (200g) dark chocolate (Check the ingredients if it has “cocoa butter” in it.)
- Bamboo skewers
- Cornstarch, to dust
Mochi Dough:
- 1 cup glutinous rice flour
- 5 tbsp sugar
- Salt, to taste
- 1 cup (240ml) hot water
Instructions:
PREP FRUITS
1. Prepare fruits of your choice. Rinse and pat dry with paper towels. Cut them into bite-sized pieces if needed.
2. To a mixing bowl, add chocolate and slowly melt it over hot water. Make sure that even a small amount of water doesn’t come into the chocolate. When the chocolate is completely melted, transfer it to a glass.
3. Skewer fruit pieces and gently dip it into chocolate. Place it on a silicone mat (or parchment paper) and let cool completely. If it’s summer, you can put them in the fridge.


MAKE MOCHI DOUGH
1. In a mixing bowl, combine 1 cup glutinous rice flour along with the sugar and salt to taste. Whisk together until well combined.
2. Add 1 cup of hot water. (Don’t pour it all at once. Using a spoon, add little by little.) Whisk until everything is mixed well. Cover with plastic wrap and make some holes with a bamboo skewer. Microwave for 1 minute. Take it out and using a spatular, give it a good stir.
3. Cover and microwave for another 1 minute. For a soft and chewy texture, make sure to stir it long enough.
4. The cooking time can vary, so repeat the process until your dough looks like mine. (For your information, I microwaved it three times for 1 minute and three more times for 30 seconds.) Let cool for 3 minutes.
5. Generously dust your work surface with cornstarch and place your mochi dough. Make sure to dust your dough and the fingers, too.

MAKE FRUIT MOCHI
1. To shape, divide the dough into small pieces depending on the size of your fruits.
2. Gently stretch each piece. Try to make it thick in the middle & thin on the outside. Let sit. Cover with plastic wrap so that they don’t get too dry.
3. Grab one piece and dust off the cornstarch. Put the fruit in the middle and seal it tightly. If it gets sticky, you can redust with more cornstarch. Repeat the process until you use all the dough.
4. For easier slicing, put them in the freezer for a few minutes and cut them in half. Place on a serving plate. Enjoy~!
