Today, let’s make Spam Fried Rice, the simplest fried rice in the world. Just because something is quick and simple, that doesn’t mean it’s not great. This will be one of the easiest fried rice of all time but one of the best you’ve ever had.
Spam Fried Rice (4 servings)
Ingredients:
- 7 oz (200g) Spam
- 4 eggs
- Kosher salt, to taste
- 3 green onions
- 3 cloves garlic
- 4 cups (840g) leftover rice
- 4 tbsp neutral-tasting oil, divided
- Generous pinch of toasted sesame seeds
- 2 tsp toasted sesame oil
Sauce:
- 2 tbsp soy sauce
- 1 tbsp mirin (or sake, water)
- 1 tsp chicken bouillon powder (or oyster sauce)
- 1/4 tsp black pepper
Instructions:
PREP INGREDIENTS
1. Cut Spam into 1/4-inch cubes. (Optionally, if you want to remove that saltiness or greasiness, soak in hot water for 10 minutes.)

2. Beat the eggs with a pinch of salt.
3. Thinly slice the green onions. Separate the whites and greens. Finely chop the garlic cloves.
MAKE SAUCE
In a container, mix together the soy sauce, mirin, chicken bouillon powder, and black pepper.
MAKE SPAM FRIED RICE
1. Optionally, crumble the rice with your hands for a easier stir-frying.

2. In a wok (or pan), add 2 tablespoons of oil and heat it over high heat. Once it’s heated, pour in the beaten eggs and let sit for 30 seconds. Stir until 70 percent cooked and remove from the wok. Set aside.

3. In the same wok, add 2 tablespoons of oil and place it over high heat. Add Spam. Fry for 3 minutes or until golden brown and crisp. Add the white parts of the green onions and garlic. Saute for 1 minute or until fragrant.

4. Add rice. Break it down a little bit and give it a good stir for 1 minute. Pour the sauce around the edges and give it about 30 seconds to caramelize. Stir-fry everything together for 2 minutes.
5. Add the eggs back into the wok. Break it into little pieces and toss together for 1 to 2 minutes. Taste and add more salt if it’s needed. Turn the heat off.
6. Add in the rest of the green onions along with sesame seeds and sesame oil. Give it a final mix. Serve with kimchi. Enjoy!
