Korean side dishes (or banchan) are the joy of eating Korean meals. You get all the different textures and flavors and they make a beautiful harmony with the main dish. They are all great but this dried squid side dish called Jinmichae Bokkeum is one of the best. It’s chewy, slightly sweet and spicy. Yes, it’s so addictive!
Korean Dried Squid Side Dish
Ingredients:
- 5 oz (150g) dried squid
- 2 tbsp neutral-tasting oil
- Generous pinch of toasted sesame seeds, to garnish
Sauce:
- 1 tbsp Korean chili pepper flakes (gochugaru)
- 1 tbsp sugar
- 1.5 tbsp Korean chili paste (gochujang)
- 1/2 tbsp soy sauce
- 2 tbsp light corn syrup
- 1 tbsp toasted sesame oil
- 1 tbsp kewpie mayo
Instructions:
1. Rinse the dried squid under running water. Drain.
2. Make the sauce: In a small container, stir together the Korean chili pepper flakes, sugar, Korean chili paste, soy sauce, corn syrup, sesame oil, and kewpie mayo.
3. In a wok (or pan), heat the oil (2 tbsp) over medium-low heat. Once it’s nice and hot, add the sauce and fry for about 1 minute.
4. Once it starts to bubble, reduce it down to low heat. Add the dried squid and toss everything together for 2 to 3 minutes. Transfer it to a serving plate. Sprinkle with some sesame seeds. Serve it with hot rice and other side dishes. Enjoy~!
NOTE:
- It can be stored in the fridge for 2 to 3 days.

1.5 tbsp Korean chili paste (gochujang)
1/2 tbsp soy sauce
2 tbsp light corn syrup
1 tbsp toasted sesame oil
1 tbsp kewpie mayo
