What can you cook with 3 bucks? Today, for less than 3 dollars, let me show you how to make delicious potato croquettes. However, there’s a big problem. Once your family members or friends taste it, they will keep asking you to make it. Thus, it might be a better idea to cook it alone in your basement, bunker, or somewhere else. I told you already, so if that happens, I’m not responsible!
POTATO CROQUETTES (Makes:5)
Ingredients:
- 2-3 Yukon Gold potatoes (300g)
- 2 tbsp water
- 1/4 yellow onion
- 1/3 carrot
- 1 tbsp vegetable oil
- 1.8 oz (50g) ground beef (or pork, chicken, lamb, etc.)
- 1 tbsp (14g) unsalted butter
- Black pepper, to taste
- 1/2 cup all-purpose flour
- 2 large eggs
- 2 cups panko breadcrumbs
- Vegetable oil, to fry
- Ketchup, to serve
Sauce:
- 1 tbsp soy sauce
- 1 tbsp concentrated chicken stock (or oyster sauce)
- 6 tbsp mirin
Instructions:
MAKE FILLINGS
1. Cut the potatoes into small pieces and put them in a bowl. Add 2 tablespoons water. Cover with plastic wrap and microwave it for 6 minutes. Mash the potatoes.
2. Meanwhile, finely chop the onion and carrot. Make the sauce. In a small container, mix together the soy sauce, chicken stock (or oyster sauce), and mirin.
3. In a pan, add a splash of oil and the ground beef. Break up the beef so that it doesn’t clump together. Once the beef is no longer pink, add the carrot and onion. Give it a few stirs.
4. Pour the sauce and bring it to a boil over high heat until all the vegetables and the meat are fully cooked. Once you see the bubbles, simmer for 1 minute. Strain out the sauce but don’t throw it away yet.
5. To the mashed potatoes, add the beef and the vegetables. Add the melted butter and black pepper to taste. Mix together. Taste and add 1 or 2 teaspoons of the sauce if needed.
BREAD POTATO MIXTURE
1. Make it round with the potato mixture.
2. Take out 3 trays for the breading station. Fill them with flour, beaten eggs, and panko breadcrumbs. Dredge them in the flour, coat them in the egg wash, and cover them with breadcrumbs. Make sure that they are coated well.
DEEP-FRY & SERVE
1. Fill your wok (or pot) with enough oil. Heat that over medium-high heat to 170 ℃ (338 ℉). Once it reaches the oil temperature, place them all in. Cook until golden brown.
2. Drain on a cooling rack. Serve with some ketchup. Enjoy!
