Are you sick and tired of eating cold cereal and apples in the morning? Then, you came to the right place! Today, I will show you 4 Kinds of Quick & Easy Comfort Meals for your BREAKFAST. Alright, are you guys ready? Let’s get started!
#1 GYERAN BAP (1 serving)
Ingredients:
- 1 cup (210g) hot cooked rice
- 1 green onion
- 1 tbsp neutral-tasting oil
- 2 large eggs
- Salt and pepper, to taste
- 1 tsp toasted sesame oil (or unsalted butter)
- 1 tsp soy sauce
- Generous pinch of toasted sesame seeds, to garnish
Instructions:
1. Put rice into a bowl.
2. Thinly slice the green onion.
3. In a pan, heat the oil (1 tbsp) over medium heat. Crack 2 eggs and make fried eggs. Add salt and pepper to taste.
4. Remove it from the pan and place it on top of the rice. Add the sesame oil and soy sauce.
5. Garnish with sliced green onion and sesame seeds. Enjoy~!
#2 SOFT TOFU EGG RICE (1 serving)
Ingredients:
- 1 green onion
- 2 large eggs
- 1 silken tofu (12 oz, 350g)
- 1 tsp oyster sauce (or soy sauce, salt)
- 1 tbsp neutral-tasting oil
- 1 cup (210g) hot cooked rice
- Generous pinch of toasted sesame seeds
- 1 tbsp toasted sesame oil
Instructions:
1. Thinly slice the green onion.
2. In a bowl, combine the tofu, beaten eggs, and oyster sauce to season. Mix well with a spatula.
3. In a pan, heat the oil (1 tbsp) over medium-high heat. Once it gets nice and hot, pour the tofu and egg mixture. Stir it occasionally.
4. Once the eggs are 80% cooked, turn the heat off. Gently pour it over the rice. Garnish with the green onion, sesame seeds, and sesame oil. Serve with kimchi. Enjoy~!
#3 SPICY TUNA BIBIMBAP (1 serving)
Ingredients:
- 10.6 oz (300g) canned tuna
- 1/4 yellow onion
- 1-2 green onions
- 1 clove garlic
- 1/2 chili pepper
- 1-2 lettuce leaves
- 1/2 tbsp chili oil (optional)
- 1 tbsp neutral-tasting oil
- Handful of canned peas or corns (optional)
- 1 cup (210g) hot cooked rice
- 1 fried egg, to serve
- Generous pinch of toasted sesame seeds, to garnish
- 1 tsp toasted sesame oil
Sauce:
- 1 tbsp Korean chili pepper flakes (gochugaru)
- 1 tbsp Korean chili paste (gochujang)
- 1/2 tbsp oyster sauce
- 1 tbsp light corn syrup
- 1/2 tbsp toasted sesame oil
Instructions:
1. Open the canned tuna and drain out the oil with a strainer.
2. Finely chop the onion, green onions, garlic, and chili pepper.
3. Slice the lettuce into bite-sized pieces.
4. In a mixing bowl, mix together Korean chili pepper flakes, Korean chili paste, oyster sauce, corn syrup, and sesame oil. Add the chili oil (if using).
5. In a wok (or pan), heat the oil (1 tbsp) over medium-high heat. Once it gets nice and hot, add the green onions (save some for garnish) and garlic. Saute for 1 minute or until fragrant.
6. Add finely chopped onion and chili pepper. Stir-fry them for about 1 minute. Add the drained tuna, sauce and some canned peas or corns (if using). Stir to combine. Set aside.
7. To serve, add rice into a serving bowl. Top with lettuce, a fried egg, and some tuna mixture. Sprinkle on the green onions and sesame seeds. Drizzle with the sesame oil (1 tsp). Enjoy~!
#4 BEEF & VEGETABLE PORRIDGE (1 serving)
Ingredients:
- 1/8 yellow onion
- 1 oz (30g) zucchini
- 1 oz (30g) carrot
- 1 shiitake mushroom
- 2.4 oz (70g) ground beef (optional)
- 1/2 tbsp mirin
- Salt and pepper, to taste
- 1 tbsp toasted sesame oil
- 1 cup (210g) cooked rice
- 2 cups (480ml) water
- 1 tsp Korean beef stock powder (dasida) (or soy sauce, chicken bouillon powder, oyster sauce, salt)
- Generous pinch of toasted sesame seeds
- 1 tsp toasted sesame oil
Instructions:
1. Finely chop the onion, zucchini, carrot, and shiitake mushroom.
2. In a mixing bowl, mix together ground beef and mirin. Season with salt and pepper. Mix to combine.
3. In a wok (or pot), heat the sesame oil (1 tbsp) over medium heat. Add the ground beef. Make sure to break up the meat and saute for 1-2 minutes.
4. Once the beef is cooked, add the cooked rice (1 cup) and water (2 cups). Bring it to a boil.
5. Once it starts to boil, add the chopped vegetables and Korean beef stock powder. Let it continue to boil, stirring occasionally. Add more water if necessary.
6. Once it gets thicker, transfer it to a serving bowl. Finish with the sesame seeds and sesame oil. Enjoy~!
NOTE:
- If you want to make it vegetarian, you can simply leave out the beef. No problem at all!
