Today, let’s make Japanese Fried Rice, one of the simplest, easiest, and most delicious fried rice of all time. Even though you had a long day of work, you’re not gonna look at takeout menus because it’s that quick and easy and delicious! Alright, are you guys ready? Let’s get started!
JAPANESE FRIED RICE (2 servings)
Ingredients:
- 1-2 green onions
- 4 eggs
- 4 slices ham (80g) (or pork, chicken, beef, etc.)
- 2 cups (420g) cooked short-grain rice, preferably day-old
- 2 tbsp neutral-tasting oil
- 1/2 tsp kosher salt, plus more for beaten eggs
- Black pepper, to taste
- 1/2 tbsp sake (optional)
- 1 tbsp soy sauce
- 1 tsp toasted sesame oil
- 1/2 cucumber (optional), to garnish
- Japanese pickled ginger (beni shoga), to garnish
Instructions:
PREP INGREDIENTS
1. Thinly slice the green onions.
2. In a small container, beat the eggs with a pinch of salt.
3. Cut the ham into small bite-sized pieces.
4. Take the rice from the refrigerator. Crumble with your hands. (If you are using freshly cooked rice, spread it out on a wide plate and let it cool completely. This will help remove the moisture from the rice.)
MAKE FRIED RICE
1. In a wok (or pan), heat the oil (2 tbsp) over high heat. Once it gets nice and hot, add the beaten eggs. Let sit for 30 seconds or until the bottom of the eggs is set but the top is still runny.
2. Push the eggs to one side and into that empty space, add the cooked rice along with the ham, salt (1/2 tsp), and black pepper to taste. Using a spatula, break the eggs into smaller pieces and stir-fry it all together for 3 minutes. To separate the rice more easily, add the sake (if using).

3. Add the soy sauce around the edges and give it about 20 seconds to caramelize. Stir-fry it for 1 minute. Taste and add more salt (or soy sauce) if needed.

4. Turn the heat off. Add the green onions (save some for garnish) and sesame oil. Give it a final mix.
5. Divide the rice into serving plates. Optionally, garnish with sliced cucumber and red pickled ginger. Sprinkle on some green onions. Enjoy!
