Ground Beef and Spinach Stir-Fry is a super simple dish I make all the time using everyday ingredients you probably already have. Inspired by the bold flavors of Thailand’s famous Pad Kra Pao, this dish is packed with savory, garlicky goodness and comes together in no time. So please give it a try. Ground Beef and Spinach Stir-Fry (3-4 servings)
Ingredients:
- 6 cloves garlic
- 2-3 green onions, divided
- 2 Korean Cheonyang chili peppers (or jalapeños, serranos, etc.)
- 1 mild red chili (optional), for color
- 1/2 lb (230g) spinach
- 2 tbsp neutral-tasting oil
- 1 lb (450g) ground beef
- 1 tsp sesame oil (optional)
- 4 fried eggs (optional), to serve
Sauce:
- 1 tbsp fish sauce
- 2 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tsp dark soy sauce
- 1 tbsp sugar
- 2 tbsp water
- 1/2 tbsp cornstarch
Instructions:
PREP INGREDIENTS
1. Finely chop the garlic cloves. Thinly slice the green onions, separating the whites and greens. Thinly slice the green chilies and 1 mild red chili (if using). (If you can’t handle spicy food, use just 1 green chili.) Cut the spinach into bite-sized pieces, if needed.

2. Make the sauce: In a small container, combine all the sauce ingredients and mix well. Set aside.

MAKE GROUND BEEF AND SPINACH STIR-FRY
1. In a large wok (or pan), heat the oil over high heat. Once it gets nice and hot, add the ground beef, spread it out, and sear for 1 to 2 minutes or until the bottom turns golden brown.

2. Flip, break up the beef, and stir-fry for 3 minutes or until most of the moisture has evaporated.
3. Add the garlic, white parts of the green onions, and green chilies. Stir-fry for 1 minute or until fragrant. Add the spinach and stir-fry for 1 to 2 minutes or until it starts to wilt.


4. Give the sauce a quick stir and pour it in. Stir-fry for 1 minute or until everything is evenly coated.

5. Turn off the heat. Add the sesame oil (if using), red chilies (if using), and green onions. Give it a final mix. Serve with hot rice. Optionally, top with a fried egg. Enjoy!

I tried this out and it was DELICIOUS. I have anemia issues so I’m always on board for trying a recipe with beef and spinach. That it was fast and super easy was a bonus. Loved it.
