How many SPAM do you have in your pantry?
Let me guess, they are right next to the canned tuna and covered with dust, right? You bought them but they don’t really appeal to you. If this is you, today, let me change your mind with 6 amazing recipes. Alright, are you guys ready? Let’s get started!
#1 SPAM MAYO RICE
Ingredients:
- 3.5 oz (100g) Spam
- 1-2 green onions
- 1/4 yellow onion
- 1 egg
- 3 tbsp neutral-tasting oil, divided
- 1 tbsp soy sauce
- 1/2 tbsp sugar
- 1/2 tbsp mirin (optional)
- 1 cup (210g) hot cooked rice
- Handful of microgreens (optional)
- Kewpie mayonnaise (optional), to drizzle
Instructions:
1. Cut the spam into little cubes. Soak them in hot water for 10 minutes. Drain.
2. Thinly slice the green onions and onion.
3. In a pan, add 1 tablespoon of oil. Once it’s nice and hot, crack an egg and scramble. Once the egg is cooked, remove from the pan and set aside.
4. To the same pan, add 1 tablespoon of oil. Once it’s heated, add the spam. Fry until golden brown. Remove from the pan.
5. To the same pan, add 1 tablespoon of oil. Once it’s nice and hot, add sliced green onions. Saute for 1 minute or until fragrant. Add the onion and give it a few stirs. Add the soy sauce, sugar, and mirin (if using).
6. To serve, put some rice in a serving bowl. Top with the onion, scrambled egg, spam, and microgreens (if using). Drizzle with mayonnaise (if using). Enjoy!
#2 SPAM PANCAKES
Ingredients:
- 3.5 oz (100g) Spam
- 1/4 yellow onion
- 1/3 carrot
- 2 green onions
- 1 mild red chili (optional), for color
- 1 tsp minced garlic
- 2 eggs
- Black pepper, to taste
- 2 tbsp Korean pancake mix (of flour with salt and pepper, to taste)
- 1 tbsp neutral-tasting oil, plus more if needed
Instructions:
1. Put the spam in a plastic bag and mash it with your fist. Finely chop the onion and carrot. Thinly slice the green onions and chili pepper (if using). Put them in a mixing bowl.
2. Add the minced garlic, eggs, black pepper to taste, and Korean pancake mix. Mix well.
3. In a pan, heat the oil (1 tbsp) over medium-high heat. Once it’s heated, add some spam mixture and gently press it down. Repeat with the remaining spam mixture and place some red chili (if using) on top. Once the bottom turns golden brown, flip and cook the other side. Add more oil if needed.
4. Once they are golden brown and cooked through, place them on a plate. Serve with some hot rice. Enjoy!
#3 SPAM TOFU FRIES
Ingredients:
- 1 package firm tofu
- Salt and pepper, to taste
- 3.5 oz (100g) Spam
- 1 cup all-purpose flour
- 1-2 eggs
- 1 cup panko breadcrumbs
- 1-2 tbsp parsley flakes (optional)
- High-heat oil, for frying
- Sweet chili sauce, to serve
Instructions:
1. Cut the tofu into large chunks. Pat dry with paper towels. Season with salt and pepper.
2. Cut the spam into tofu sizes. Dredge them with some flour and put the spam between the tofu.
3. Take out 3 plates for the breading station. Add some flour, eggs and breadcrumbs to each plate. Optionally, add some parsley flakes to the breadcrumbs. (You don’t need to season the eggs because spam is already salty.)
4. Dredge the spam & tofu carefully in the flour. Coat them in the egg wash and breadcrumbs. Make sure all sides are completely coated.
5. Add enough oil in a pan (or wok). Once the oil is heated, deep-fry until crispy, golden brown. Be careful not to burn it. Drain on some paper towels. Cut them in half and serve with some sweet chili sauce. Enjoy!
#4 SPAM SANJEOK
Ingredients:
- 3.5 oz (100g) Spam
- 2-3 green onions
- 1/2 red bell pepper
- 1/2 yellow bell pepper
- 5-6 green chilies
- 1 cup Korean rice cakes
- 1 tbsp neutral-tasting oil, plus more if needed
Instructions:
1. Cut the spam, green onions, bell peppers, chili peppers into 2-inch (5-cm) strips.
2. Skewer them one by one: spam, rice cake, yellow bell pepper, green chili, red bell pepper, green onion, spam, rice cake. Trim off the ends.
3. In a pan, add the oil (1 tbsp). Heat it over low heat. Place the skewers nicely onto the pan and keep an eye on it. Once they’re cooked on both sides, remove from the pan. Serve on their own or enjoy with your favorite sauce.
#5 SPAM FRIED RICE
Ingredients:
- 2 eggs
- 1 cup (210g) cooked rice
- 2 tbsp neutral-tasting oil, divided
- 1-2 thinly sliced green onions
- 3.5 oz (100g) Spam
- 1/2 tbsp oyster sauce (or concentrated chicken stock)
- Handful of microgreens, to serve
- Kewpie mayonnaise (optional), to drizzle
- Teriyaki sauce (optional), to drizzle
Instructions:
1. Add 2 egg yolks to the cooked rice. Add 1 tablespoon of oil and mix well. Set aside.
2. Thinly slice the green onions. Cut the spam into cubes.
3. In a wok, heat the oil (1 tbsp) over medium-high heat. Once it’s heated, add the green onions. Saute for 1 minute or until fragrant. Add the spam and stir-fry it a little bit.
4. Add the rice and stir-fry everything. Add the oyster sauce or chicken stock to make it more flavorful. Once most of the liquid has evaporated, transfer to a serving plate. Garnish with microgreens. Optionally, drizzle with mayonnaise and teriyaki sauce. Enjoy!
#6 STIR-FRIED VEGETABLES WITH SPAM
Ingredients:
- 2 green onions
- 1/4 red bell pepper
- 1/4 yellow bell pepper
- 3.5 oz (100g) Spam
- 1 tbsp neutral-tasting oil
- 1-2 pepperoncino (optional)
- 1 tbsp minced garlic (optional)
- Handful of mung bean sprouts
- 1/2 tbsp toasted sesame oil
- Generous pinch of toasted sesame seeds, to garnish
Sauce:
- 1/2 tbsp sugar
- 1 tbsp soy sauce
- 1 tbsp oyster sauce
- 2 tbsp water
- 1 tbsp cornstarch (optional)
Instructions:
1. Thinly slice the green onions. Cut the bell peppers and spam into strips.
2. Make the sauce. In a small container, mix together the sugar, soy sauce, oyster sauce, water, and cornstarch (if using).
3. In a wok (or pan), heat the oil (1 tbsp) over medium-high heat. Once it’s heated, add the green onions, pepperoncino (if using) and minced garlic (if using). Saute for 1 minute or until fragrant.
4. Add the bell peppers and spam. Stir-fry them a little bit. Add the sauce. Give it a few stirs.
5. Increase the heat to high. Add the mung bean sprouts. Toss together for less than 1 minute. Turn off the heat. Add the sesame oil (1/2 tbsp) and give it a final mix. Sprinkle on some sesame seeds. Serve with hot rice. Enjoy!
