Japchae is Stir-Fried Starch Noodles with lots of veggies, and it is one of the most popular Korean traditional foods. I think you couldn’t even try it at home because you may think making traditional food is quite difficult. However, as always, let me show you an easy and delicious Japchae recipe. Believe it or not, you can make it within 15 minutes, so buckle up!
#1 CLASSIC JAPCHAE (2-3 servings)
Ingredients:
- 8.8 oz (250g) pork loin (or beef, chicken) (Use lean parts)
- 1/2 yellow onion
- 1.8 oz (50g) carrot
- 1.8 oz (50g) red/yellow bell peppers
- 1.8 oz (50g) shiitake mushrooms
- 1.8 oz (50g) garlic chives
- 4.2 oz (120g) Dangmyeon noodles (Korean sweet potato starch noodles, 당면)
- 1/2 tbsp dark soy sauce (optional)
- 1.5 tbsp toasted sesame oil
- 2 tbsp neutral-tasting oil
- Salt and pepper, to taste
- 1 tbsp minced garlic
- Generous pinch of toasted sesame seeds
Sauce:
- 1.5 tbsp sugar
- 1.5 tbsp soy sauce
- 1 tbsp oyster sauce
- 1/2 tsp MSG (optional)
Instructions:
PREP MEAT & VEGETABLES
1. Cut the pork loin into thin strips.
2. Slice the onion but “not too thin“. Cut the carrot, bell peppers, and mushrooms into thin slices.
3. Cut the garlic chives into long strips.
COOK NOODLES
1. In a wok (or pot), add Dangmyeon noodles with 6 cups of water. Add 1/2 tbsp dark soy sauce (if using). Bring it to a boil over medium heat.
2. Once it starts to boil, set a timer for 6 minutes. Stir it occasionally. Drain the noodles and put them in a bowl. Coat them with sesame oil (1.5 tbsp). Set aside.
MAKE SAUCE
In a small container, mix together the sugar, soy sauce, oyster sauce, and MSG (if using).
STIR-FRY EVERYTHING
1. In a wok (or pan), heat the oil (2 tbsp) over medium heat. Once it gets nice and hot, add the pork and season with salt and pepper.
2. Once the pork is no longer pink, add the garlic (1 tbsp), onion, carrot, and bell peppers. Stir-fry everything.
3. Once the vegetables are slightly cooked, add the shiitake mushrooms and garlic chives. Add the sauce.
4. Reduce the heat to low. Add the noodles and stir to combine.
5. Transfer it to a serving plate. Sprinkle on a good amount of sesame seeds. Enjoy~!
#2 JAPCHAE BAP (1 serving)
Ingredients:
- 1-2 green onions
- 1 oz (30g) garlic chives
- 1/4 yellow onion
- 1 oz (30g) carrot
- 1 clove garlic
- Neutral-tasting oil, to coat
- 1.8 oz (50g) protein of your choice (optional)
- Leftover japchae
- 1 cup (210g) steamed rice
- Generous pinch of toasted sesame seeds, to garnish
Sauce:
- 1/2 tbsp soy sauce
- 1/2 tbsp oyster sauce
- 1/2 tbsp chili oil
- 1 tsp toasted sesame oil
Instructions:
1. Cut the green onions and garlic chives into long strips. Slice the onion. Cut the carrot into thin matchsticks. Finely chop the garlic.
2. In a small container, mix together soy sauce, oyster sauce, chili oil, and sesame oil.
3. Add a splash of oil to a pan. Once it gets nice and hot, add the green onions, garlic, and protein of your choice (if using). Saute for 1 minute or until fragrant.
4. Increase the heat to high. Add the sliced onion and carrot.
5. Once the vegetables are slightly cooked, add the sauce and stir-fry it.
6. Using scissors, cut the leftover japchae, 1 or 2 times. Add japchae and garlic chives. Quickly stir-fry for 1-2 minutes or until everything is nicely coated.
7. To serve, add steamed rice (1 cup) onto a serving plate. Gently top with japchae. Sprinkle on sesame seeds. Serve with kimchi. Enjoy~!
