SOY SAUCE NOODLES (2 servings)
Ingredients:
- 2 green onions
- 1/2 English cucumber (or cabbage, lettuce, bell pepper, etc.)
- 2 tbsp toasted sesame seeds
- 7 oz (200g) somyeon noodles (or buckwheat noodles, spaghetti, instant ramen noodles)
- 2 fried eggs (optional), to garnish
Sauce:
- 3.5 tbsp soy sauce, plus more if needed
- 1 tbsp sugar
- 2 tbsp toasted sesame oil
- 1 tbsp balsamic vinegar (or white/rice vinegar)
Instructions:
PREP INGREDIENTS
1. Thinly slice the green onions. Cut the cucumber into thin matchsticks.

2. Grind the sesame seeds with a mortar and pestle for a more intense nutty flavor.
3. Make the sauce: Combine all the sauce ingredients in a small container and mix well.

MAKE SOY SAUCE NOODLES
1. Bring a pot of water to a boil. Cook the noodles according to the package instructions.
